Improvement of extraction and stability of anthocyanins, the natural red pigment from roselle calyces using supercritical carbon dioxide extraction

In this work, anthocyanins, a natural red pigment, were isolated from roselle calyces using supercritical carbon dioxide (SC-CO2). Three process conditions, namely pressure, temperature, and co-solvent ratio (ethanol-water), investigated three-factorial design response surface methodology (RSM). The method was used to model the extraction of total phenolic content, flavonoid colour characteristics (i.e., lightness (L*), chroma (C*), hue (h°)). best conditions 27MPa, 58 °C, 8.86 % at maximal anthocyanin, phenolic, with minimal L* C* values. anthocyanin production 1197 mg/100 g dried calyces. Next, high relative value cyanidin 3-sambubioside compound in SC-CO2 extract analyzed an ultra-high-performance liquid chromatogram (UHPLC). Anthocyanins stored 4 25 37 °C had average reaction rate (k) half-life (t1/2) values 0.0032 216 days, 0.0098 70 0.024 28 days for 0.0093 74 0.0222 31 0.0444 15 solid-liquid (SLE), respectively, first-order degradation kinetics. These findings demonstrated that studied provided lower rates longer t1/2 than conventional SLE methods.
